Nutrition-Packed Salad Recipe

I lovingly prepared this nutrition-packed salad recipe for the hubby on the eve of our anniversary. We are so much into healthy homemade salads, vegetarian pizzas (will post the recipe soon), overnignt oats, detox water and breakfast parfaits these days. I am so proud to say that instead of snacking on junk foods, we now chose to munch on healthy alternatives. We still do have cheat days but kudos for my effort in getting the fambam to eat clean. I deserve a pat on the back, LOL.

Here's the recipe I made up by myself. I shall call this my signature simply CHERrific salad recipe. I layered these ingredients on the salad bowl:

  • lettuce
  • rolo rosa
  • baby spinach 
  • cherry tomatoes
  • dried cranberries
  • fresh pomegranate seeds
  • chia seeds (soaked in water overnight)
  • sunflower seeds

For the salad dressing, I used olive oil with feta cheese and herbs and I asked the hubby to squeeze a lemon before devouring on it.

I don't normally measure ingredients when I cook/prepare food.
