Yes, we did it! We finally baked Blueberry Muffin and Chocolate Muffin one Friday night. My girl has been bugging me to bake with her so in one of our trips to Ikea, we made a side trip to Giant to buy some baking goods.
Here's what we bought:
1) Muffin Pan
2) Cupcake Cases and Flags
3) Blueberries and Chocolate Chips
4) Muffin Mix
Here's the recipe that we followed:
1) Mix the 500g muffin mix with 4 eggs and 110ml water
We don't have an electric mixer yet so my girl did the mixing manually. If you have one, mix it for approximately one minute on low speed. Scrape down and blend on second speed for 4 minutes.
2) Add 138g of Butter Oil or Vegetable Oil to the mixture (we used the latter) and blend on low speed for approximately 1 minute.
3) Add blueberries and chocolate chips to the final mixture.
4) Pour the mixture on the muffin pan lined with muffin cases (Mistake #1, we bought cupcake cases) and baked in 215°C oven temperature for 20-22 minutes until golden.
4) Set aside to cool down and served to your family with love. (Mistake #2: we did not fill the paper case to the brim hence it doesn't look like a muffin, hehe)
Yay! We have budding bakers in the house! Our two boys immensely enjoyed what we baked. Little rabbit and I are fond of blueberries while big rabbit and daddy rabbit love chocolate that's why we baked two flavours in one go. We just split the mixture into two equal halves and added the flavour of our choice. Can't wait to bake apple and banana muffin next!
Happy baking to us! My girl enjoyed the baking process tremendously. Baking is great form of mother and daughter bonding. I highly recommend it to all moms out there!
