about greasy, calorie-laden pizza slices from takeaway establishments and get
the whole family involved in some pizza making! When you make something
yourself, you know exactly what goes into it and you’re accountable for whether
it’s healthy or not. For this meal idea, you’ll need to get a pizza base,
vegetables of your choice, cheese, passata sauce and potential meat toppings
such as chicken or prawns. Making your own pizza gives you great flexibility
too – if one of your kids don’t like prawns and another simply adores them, you
can customise the different slices!

Stuffed Veggies
Vegetables
such as mushrooms, capsicums, zucchini flowers, eggplant, sweet potato and
potatoes are all great bases and can be stuffed full of delicious filling very
easily. If you’re a fan of mushrooms, try stuffing them with a breadcrumb, herb
and blue cheese mixture (stilton is a very tasty option). The sweetness of
sweet potatoes will be nicely contrasted with the saltiness of feta and bacon,
while ricotta is a great companion for eggplants. You could also crack a few
eggs into your capsicum, top it with some herbs and then bake it in the oven.
Or you could stuff the capsicum with cooked rice, spice and chopped veggies,
before grilling it on a grill. Don’t own one? There’s no need to fret – there

Fruit Ice-blocks

has never been easier to make, nor refreshing, than it is with fruit
ice-blocks. All you will need is some chopped up fruit, ice-block moulds
(easily purchased in stores or online) and some liquid filling. Watermelon,
mango, strawberries and raspberries are all great fillers, while coconut water
or fruit juice can be used. Simply pop all the ingredients in the moulds and
then place them in the freezer for a few hours. In no time at all, you and the
kids will be feasting on yummy, cool ice-block treats.
As
you can see, you don’t have to sacrifice putting a nourishing meal on the
table. Throwing together any of these quick and easy recipes will keep everyone
