Simply Cherrific Baked Ham and Egg Cups Recipe


One of the many benefits of using social media positively is finding inspirations from great people you meet online. As I was browsing my Instagram (IG) feed this morning while waiting for the kids to wake up, I saw an IG friend's recipe of ham and egg baked cups. It's a light bulb moment! Instantaneously, I had an idea what to prepare the kids for breakfast!

Like I always say, whenever I cook I make use of whatever is available in the fridge and the pantry. Luckily, I bought a picnic ham during a recent visit at the supermarket and we almost never really run out of eggs. The recipe that I saw on IG used green onion and purple cabbage as garnishing but I don't have any purple cabbage in our vegetable bin inside the refrigerator so I used lettuce and added baby spinach leaves instead.

Here's what you'll need:
  • muffin baking tray
  • FairPrice Black Sesame Oil
  • ham (thinly sliced)
  • eggs
  • salt and pepper
  • lettuce (chopped)
  • baby spinach leave
  • green onion (chopped)

Instructions:

1) Pre-heat your oven to 400F if you are using an electric oven. In my case, I used a gas fired oven so all I needed to do is wait until the water is boiling.

2) Coat your muffin tray thinly with your cooking oil of choice. I used FairPrice' Black Sesame Oil for this recipe. (Optional: glaze your ham with cooking oil.)

3) Form ham cups in each hole of the muffin baking tray.

4) Crack the egg and pour carefully in each of the ham cups.

5) Add salt and pepper to taste. (Note: Most hams are salty enough, you may opt not to add salt anymore.)

6) Bake for 10-15 minutes if you are using an electric oven or 5-10 minutes if you are using gas fired oven like I did. Time span depends on how you want your egg cooked, softer or firmer.

7) Remove the baked ham and egg cups from the muffin baking tray.

8) Garnish with your own choice of vegetables and condiments and serve with love.
